China Food Service Technology Congress

Food retail sales and service incomes have been maintained at a growth rate that is over 10%; in the “12th Five-Year Plan" polarization performance render high-end dining has decreased while public catering has increased.  With the rapid development of global food trading, safety is a constant concern.  Food safety incidents are not only happening with increasing frequency but also leading to tighter inspections on quality & hygiene and to ways that will better the food safety traceability system.

Noppen’s 2015 China Food Service Innovation Summit was held in Shanghai on February 5th& 6th   and served as an international platform for government officials, association partners, major processed food makers, catering service corporations, food chain enterprises, R&D center, super markets, and convenient stores. Experts and industry leaders discussed the global food safety situation, trace system optimization, latest industrial policies, the supply chain, the best practices and processing technologies of increasing output, improving quality, and maintaining sustainable development, and seeking the best solution providers.

2015年2月5日,由比利时诺本集团主办的2015中国食品行业技术创新大会在上海成功举办。10位来自上海食品学会、中粮、光明、旺旺、麦德龙、麦当 劳、极致蛋糕、江苏森泰食品等集团的高层,围绕食品品质、供应链规划、生产安全等议题发表了主题演讲。此外100余位代表同聚一堂,与嘉宾积极展开交流互动。

首先,上海食品学会秘书长王锡昌先生以“食品品质的评价与控制技术的进展”为主题,从健康、食品和生物资源三大重点切入,详细介绍了食品品质的评价方法、 控制技术、食品营养与品质评价研究室概况。在高科技的推动下,新型的智能感官技术、分子感官科学、指纹图谱技术、红外光谱技术等一系列现代技术,为食品品 质评估提供了最好的工具。而包括营养调控、净化/暂养的养殖捕捞技术,杀菌、深加工技术,控释、气调包装技术,以及低温保鲜技术,则保障了食品从生产环节 到贮存运输的卫生与优化。最后,通过食品贮藏品质数学模型的建立与应用,将食品种类、加工工艺和贮藏条件建立数学模型,实现了食品品质的动态模拟与预测、 食品货架寿命的预测和食品品质的控制。王锡昌教授的精彩演说,为现场嘉宾带来了丰富的资讯,大家踊跃发言提问,现场气氛十分热烈。

意大利Goglio集团液体及湿性产品系统总监Jordi Jordana Gisbert先生分享了品牌软包装发展历程。在供应方面,品牌在将生产的软包装直接或通过批发商/仓储式商场供应给终端客户,例如零售商、食品店、外送 服务、餐厅、宾馆/酒吧、食堂等的同时,也通过高速发展的电子商务渠道直接实现销售。在制作工艺方面,高利尔集团以产品感官特性、包装强度、性价比、生产 效率、物流效率、使用便利性、安全、卫生和可持续性为驱动准则,生产出保护食物的原始口味和新鲜度、使用方便、“免切割”安全保护、轻装存储运输、易于丢 弃、原料环保减排减耗的包装产品。集团展示的熟食软包装工艺引起了大家的浓厚兴趣,休息时间安排的一对一商务对谈,成功搭建了企业之间的合作桥梁。

会议现场除了传统的食品集团分享成熟的供应链和管理经验外,很多以贝思客为代表的依托电子商务平台的新型食品公司,也交流了全新的发展经营理念。此次论坛取得了圆满成功,并将对国内食品行业品质检控和生产安全发展带来积极的影响。
